Zucchini and corn fritters
These are the best tasting fritters I have ever tried, I decided to try making my own after many average restaurant attempts and they make me so pleased, I decided to share
Ingredients:
1 zucchini grated
2 tbsp tinned corn
2 large eggs
1/4 cup plain flour
Drizzle of olive oil
Grated goats cheese, to own desire
Pinch of chilli flakes
Pinch of pink salt
Pinch of pepper
Garnish:
I discovered that cherries taste amazing with these fritters (strange, right?) and I also enjoyed them with a dollop of Greek feta, sprig of mint and a side of crispy shallots found at my local grocer
Method:
Mix ingredients together and cook on a med-high heated pan, flipping when base side is golden brown, garnish as desired
